New Postal Clerk
Extending a warm welcome to Brent Rogers, our new postal clerk in the Fayetteville post office. Amber has moved on to greener pastures. “I’m from Cat Spring and have served as a substitute clerk several times before coming on board full-time. I always liked it out here. I came from the post office in New Ulm.”
Base for Cream Soup Recipe Many good cooks out there are already familiar with this. But for those of you that aren’t, it’s really easy to create a variety of cream soups with the addition of at least a pound of any cooked vegetable. Ingredients and directions are below.
• Broccoli soup? Add clean, chopped, steamed broccoli and grated American cheese
• Asparagus soup? Chop clean, fresh asparagus, cook it (steam, roast, sauté) and toss it in.
• Mushroom soup? Sauté cleaned, sliced, fresh mushrooms in a bit of butter first before adding.
• Leek soup? Stir leeks into the soup base after cleaning, steaming and chopping.
• Potato soup? Add small chunks of baked potato (peeled and partially cooked) then top with grated cheese and bits of cooked bacon. Complete cooking potatoes.
Ingredients (soup base)
• ½ cup butter
• 6 tablespoons all-purpose flour
• 2 cups Half n’ Half or cream (maybe more as needed)
• 2 cubes chicken bouillon
• ground black pepper to taste Directions: melt butter over low to medium heat in a saucepan big enough for your base and vegetables. Add flour and make a paste. Add the Half n’ Half or cream. Add bouillon cubes. Cook over low heat until thickened and bouillon is mixed in. Add pepper to taste.
Add your veggies and add more milk, depending on the thickness you desire. You could add salt but probably won’t need it since the bouillon is loaded with it. When the veggies reach your desired consistency, it’s done.
