In Defense Of The Lowly Kolache
To the editor:
A kolache is a round pastry with fruit in the middle. It is not a sausage wrap.
That is called a klobasniky. The word for sausage in Czech is klobase. Hence we have klobasniky. As I travel around I often stop at bakeries that have signs that say, “Kolaches.” When I ask for a kolache they point to the klobasniky. I kindly tell them that is not a kolache but a klobasniky. They always assure me that indeed it is a kolache. After all, right is right. You would not call a taco a burrito. Even our friends at HEB have been wrong. You would think that with all the Czechs that work there, that someone would have gotten it right. Now we have boudin wrapped in kolache dough.
I guess we will have to call it a “boudiniky.” Well I guess a klobasniky by any other name would taste just as sweet.
