Eleanora Vlasta Poncik Coufal, 93, passed away peacefully surrounded by loved ones on Saturday, March 21, 2026 in Pauls Valley, Okla. She was born Aug. 8, 1932 to the late Peter and Vinnie (Orsak) Poncik. She was united in marriage to Lee Bernard Coufal March 17, 1952 in Nelsonville. She spent all of her married life working side by side with Lee in the fields picking cotton and growing crops, hauling hay, raising cattle, hogs, taking care of the farm and raising the family.

Eleanora loved working in her yard and garden, yellow roses, canning, reading a good book and watching Wheel of Fortune. While living in Oklahoma, she developed a passion for embroidering kitchen towels to send as gifts, playing mahjong on her iPad, getting her hair and nails done, and LOVED playing bingo.

She is survived by her children: daughter, Sandy Nunez and her husband, David, of Pauls Valley, Okla., son, Ricky Coufal of La Grange, daughter, Shelley Gonzalez and her husband, John, of Round Rock. She was Granny to seven grandchildren, thirteen great-grandchildren plus baby girl due July 2026, and six great-great grandchildren. She is also survived by her sister-in-law, Anita Coufal of Fayetteville and numerous nieces and nephews.

She is preceded in death by her beloved husband, Lee, son, Bernard Lee Coufal, daughter- in-law, Dannie, her parents, Peter and Vinnie Orsak, brother, John Peter Poncik Sr. and wife, Ruth, Bennie John Poncik and his wife, Charline, sister, Lillie Coufal and her husband, Willie Coufal Jr.

A visitation was held from 3-7 p.m. on Monday, March 30, 2026, at Koenig-Belvill Funeral Home & Cremations of La Grange. The family was present from 5 p.m. to 7 p.m. to receive friends.

A celebration of life service will be held at the Industry Brethren Church in Industry, 2758 Main St., Industry, on Tuesday, March 31, 2026, at 10 a.m.

Interment will be held following the funeral service at the Industry Brethren Church Cemetery. Brother Mike Groseclose will officiate the service.

The family extends heartfelt gratitude to Valir Hospice, The Willows staff – especially Donna, Jason, and Tammy, and to her compassionate caregivers Felicita and Yoselin.

In lieu of flowers, memorial donations may be made to the Industry Brethren Church: PO Box 73 Industry, Texas in memory of Eleanora.
