Breakfast Taco Tour Continues
Last week the Record’s Jeff Wick and Andy Behlen made their second stop on the Fayette County Breakfast Taco Trail – Taqueria Rio Verde in La Grange, also known as the “Taco Shack” to many locals.
The first thing you might notice about this place is the number of vehicles in the parking lot and number of people standing on the porch. During the COVID- 19 pandemic, Rio Verde closed its inside dining room and began taking orders from a window on the porch. The dining room remains closed. The porch can get crowded on busy days. But don’t be deceived – about half the people have already ordered and are waiting on their food.
We ordered one carne guisada taco with cheese and one red pork taco with rice and beans.
While waiting, the crowd intrigued us. We saw everyone from firefighters to a city council member and even a few readers of the breakfast taco column. A man in slacks and a button-up shirt stood next to a fellow wearing flame-retardant clothes and a poison gas monitor.
After a few minutes the attendant called our number. We ate at the picnic table just off the porch.
Jeff: “The gravy in this carne guisada is next level. But I think I like the red pork better – the rice and beans levels out the spiciness.”
Andy: “The portion sizes are huge here. All you really need is one taco. I love the chili flavor of the red pork. It’s not like the al-pastor tacos you get at other places. It has a different flavor, a deep red chili flavor.”
Rio Verde offers two sauce options: red and green.
Jeff: “You could eat either one without sauce because the flavor fillings are so great. The green sauce is a lot spicier than the red.
Andy: “I’m normally a green sauce guy. But I really like Rio Verde’s red sauce. It has more of a chili flavor rather than tomato flavor, but not too spicy.
Overall impressions: We didn’t order any drinks. Our two tacos cost $10 even. Our only complaint was that the server didn’t include any napkins or a fork in our bag. These large tacos can get a little messy while eating. Be sure to ask for napkins and a fork.
