Dinner in an Instant?

Cooking supper has always been a challenge for me. When my children were at home, we seemed to always have someone at an evening practice – volleyball, soccer, basketball, softball, baseball, band, etc. Finding time to cook, (much less eat) was always difficult.

I tried to be the organized mom, getting a meal together before we left for the day and turning on the crockpot – that was only successful about once a month. We tried cooking a lot on Sunday afternoon to have leftovers during the week – they only lasted for one or two meals. We often resorted to fast food take out. Not always the healthiest choice, but when your kids are hungry right now, it was sometimes the easiest solution.
